Easy Meals for Busy People

Welcome to Flagstone PantryDon’t let back to school get the best of you. With these simple recipes, you can continue to eat well at home and on the go.

Mini Fritattas – Make these one night and refrigerate them for the week. Pop them in the microwave for a delicious breakfast.

Soaked Oats – Soak your oats in the refrigerator overnight. I soak 2 cups of rolled oats with 1 cup of water + 1 cup of almond milk. They keep like this for several days. In the morning, I portion some oats and add berries, bananas, nuts, cinnamon – you name it. For an extra special recipe suitable for guests, check this out.

Curried Chicken on Couscous – Get to know your slow cooker! The best thing about this recipe is there is no pre-cooking necessary. Literally add your ingredients to the pot and go to work. When you get home, boil 1 1/4 cups water in the microwave. Add 1 cup couscous, cover with plastic wrap, and let it sit for 5 minutes.  Serve chicken over couscous. Feel like a rock star.

Mushroom Barley Soup – This recipe is unlike any other soup recipe. ALL ingredients go into the pot at once and simmer for 30 minutes. Yep. I was skeptical at first, but this is how we do it at the market!

Red Chili – Easiest meat & bean chili out there – and so good. No chopping required. Not fancy. Super tasty!
