Inspired by Fall: Butternut Squash + Swiss Chard + Persimmons

It happened. Yesterday.  It’s suddenly cooler.  Noticeably darker.  I feel ready for the shorter days, longer evenings at home and some settling down after a busy, busy summer.  (Of course it never works out that way – the settling down part – but let me enjoy my dream for just a moment.)

My menu planning is definitely being inspired by the change in season.  Last week, I made this Kale and Apple Salad with Spiced Pecans using kale from my garden and a molasses-based vinaigrette.  I also made this amazing side dish using roasted butternut squash, French green lentils and goat cheese.  Oh my. Other delicious recommendations for grabbing fall and going with it include Pork Cutlets with Butternut Squash, Chard and Walnuts, Savory Swiss Chard Tarts, this Pumpkin-Peanut Soup, and these Pumpkin Parfarros for breakfast.  I also recently started seeing persimmons at the farmers’ market, which means Chocolate Persimmon Muffins are in my future.  Plan on enjoying every minute of it!
