This week I bought my first butternut squash of the season. I love it – it’s so versatile. It’s great roasted on its own, tossed with a bit of olive oil, salt and pepper. I also love it in soup, like in this Butternut Apple Bisque or this Moroccan Chicken and Butternut Squash Soup. It also works really well as a vegetarian main dish or as a hearty side dish in Bulgur Pilaf with Roasted Squash and Mint or in this week’s recipe ~ Butternut Barley Pilaf. Wild Mushroom Pastitsio + Savory Goat Cheese Toasts
It actually felt like Fall yesterday. While it was still sunny and 70 degrees, the air was different and the shadows were just a tad bit longer in the afternoon. Along with the change in seasons comes a backlog of casseroles, soups and stews for testing. Bring it!
The first out of the box was this Wild Mushroom Pastitsio. A lighter, vegetarian version of the traditional Greek dish, this casserole has comfort written all over it.
Poaching + Green Apple Chicken Salad
Things are about to get really interesting around here. This weekend, I am moving my portable electric burner, refrigerator, and work table into the living room. Yes – the living room. Demolition is about to begin on our home renovation, the result of which will include a brand new kitchen (!!). Until then, I will continue my quest to stir up healthy eats at home in, shall we say, less than inspiring circumstances.

Boston Revisited
As if running the Boston Marathon is not thrilling enough, I got to meet Ryan and Sara Hall. Ryan placed fourth overall in the marathon on Monday by running a screaming 2:08:41, setting the record for an American on the Boston course. It’s inspiring to be surrounded by people committed to health, fitness, and personal goals. As a competitor and spectator at athletic events, I love cheering people on and being surrounded by their energy. Boston or Bust
This is a big week. I run the Boston Marathon on Monday, April 19th. With months of the physical training under my belt, I am going through the motions of mentally preparing for the race.
