I took a little break over the past few weeks – I hope you did too! I did some travel, saw lots of family and am feeling ready for 2020. Good thing, because it’s HERE.
Soup season is officially upon us. At Flagstone Pantry, Chicken Posole was a customer favorite. Posole is a traditional Mexican soup and can be red or green (depending on the chili) and is typically made with pork or chicken. For a fun twist, I have a Southwestern Turkey Soup recipe that features green chilis and uses up any leftover (frozen!) turkey and turkey stock, for those of you with a stash still in the freezer.
In 2020, I’d like to inspire more people to prepare simple meals at home. This soup uses meat from a roasted chicken (buy it at the store!) and other easily purchased ingredients. Leftovers can be frozen. Enjoy Chicken Posole with garnish including shredded cabbage, fresh limes for squeezing, sliced avocado, and sliced radish (or cheddar cheese like we did). Add some flour or corn tortillas and enjoy the fiesta at your own table!

Happy 2020! I love pozole and I love simple! Think I’ll try this this weekend!
