Roasted Spaghetti Squash

spaghetti squashRoasting spaghetti squash is so simple and so satisfying. It makes a great substitute for pasta, rice and other grains.

Ingredients:

  • spaghetti squash
  • olive oil, salt, pepper

Directions:

  1. Heat your oven to 400 degrees. Line a sheet pan with foil.
  2. With a sharp chef’s knife, slice both ends of the squash off, leaving a flat surface on either end.
  3. Stand the squash upright on a flat surface. Use your knife to slice it in half from the top down. Use a spoon to scoop the seeds and pulp out – discard them.
  4. Brush each half of the squash lightly with olive oil. Season with salt and pepper.
  5. Place squash cut side down on the baking sheet. Roast for 40 minutes. Insert a sharp knife into the squash. If it goes in easy, the squash is cooked. If not, put it back in the oven for a few minutes.
  6. Allow the squash to cool. Use a fork to shred the inside of the squash. It comes out in strands, like spaghetti! Yum.
