Roasting spaghetti squash is so simple and so satisfying. It makes a great substitute for pasta, rice and other grains.
Ingredients:
- spaghetti squash
- olive oil, salt, pepper
Directions:
- Heat your oven to 400 degrees. Line a sheet pan with foil.
- With a sharp chef’s knife, slice both ends of the squash off, leaving a flat surface on either end.
- Stand the squash upright on a flat surface. Use your knife to slice it in half from the top down. Use a spoon to scoop the seeds and pulp out – discard them.
- Brush each half of the squash lightly with olive oil. Season with salt and pepper.
- Place squash cut side down on the baking sheet. Roast for 40 minutes. Insert a sharp knife into the squash. If it goes in easy, the squash is cooked. If not, put it back in the oven for a few minutes.
- Allow the squash to cool. Use a fork to shred the inside of the squash. It comes out in strands, like spaghetti! Yum.
