I love soup and chili. I especially love how they get better sitting in the fridge for a day or two. Of course, there is the Roasted Butternut Squash Soup that I can’t stop making. Here are some of my other favorites for right now:
Chicken Posole: Flavorful and satisfying; shred meat from a purchased roasted chicken.
Lentil Soup: Ah, lentils. My fave. Skip the sausage if you want.
Veggiestrone: This is a vegetarian minestrone soup, topped with pesto.
Tangy Lentil & Chickpea Soup: Lentils, again, but this time flavored with fresh lemon juice, balsamic vinegar and cilantro. So good!
White Bean Stew: This is not really a stew. I almost want to call it a hack, but that sounds so bad and it’s really really good and really really simple. I make this a lot.
Veggie Chili: The same one we served at Flagstone Pantry. It’s a winner.
Chickpea Noodle Soup: This one has a Persian flavor profile featuring lots of fresh herbs. See below. Yes, please.
