OFF THE SHELF: Wrangle a Cowboy Cookie

This cookie is so tasty it will make you want to giddyup over to Flagstone Pantry to buy one!

Made from rolled oats, shredded coconut, chocolate chips and natural peanut butter, the Cowboy Cookie, $2.50, is available at Handlebar Coffee Roasters, 128 E. Canon Perdido St., Suite A.

These moist, chewy cookies donโ€™t contain additives or preservatives, just whole, natural ingredients, including whole wheat pastry flour, cane and brown sugars, baking soda, coconut oil and sea salt. They are dairy-free and contain no eggs.

And they taste great! With each bite, you get a different flavor, whether coconut, chocolate or yummy peanut butter.

Chef/owner of Flagstone Pantry Kristen Desmond makes vegan and other specialty products and is looking to expand the business.

To learn more, including information on retailers that will be selling the cookies soon, call 617-4568 or visit www.flagstonepantry.com.

Would you be willing to share the recipe for your Cowboy cookie?

Hi Stephanie! I hold that one close – I have big plans for that cookie. I am so glad you like it!

I’ve also been searching high and low for a recipe, or at least one similar, ever since I saw you on Cheap Eats some time ago. I’m in Tennessee; any chance of a recipe in a vegan cookbook to come? None of the recipes I’ve found sound half as delightful and hearty as yours!
