Mini Fritattas – Make these one night and refrigerate them for the week. Pop them in the microwave for a delicious breakfast.
Soaked Oats – Soak your oats in the refrigerator overnight. I soak 2 cups of rolled oats with 1 cup of water + 1 cup of almond milk. They keep like this for several days. In the morning, I portion some oats and add berries, bananas, nuts, cinnamon – you name it. For an extra special recipe suitable for guests, check this out.
Curried Chicken on Couscous – Get to know your slow cooker! The best thing about this recipe is there is no pre-cooking necessary. Literally add your ingredients to the pot and go to work. When you get home, boil 1 1/4 cups water in the microwave. Add 1 cup couscous, cover with plastic wrap, and let it sit for 5 minutes. Serve chicken over couscous. Feel like a rock star.
Mushroom Barley Soup – This recipe is unlike any other soup recipe. ALL ingredients go into the pot at once and simmer for 30 minutes. Yep. I was skeptical at first, but this is how we do it at the market!
