Made from rolled oats, shredded coconut, chocolate chips and natural peanut butter, the Cowboy Cookie, $2.50, is available at Handlebar Coffee Roasters, 128 E. Canon Perdido St., Suite A.
These moist, chewy cookies don’t contain additives or preservatives, just whole, natural ingredients, including whole wheat pastry flour, cane and brown sugars, baking soda, coconut oil and sea salt. They are dairy-free and contain no eggs.
And they taste great! With each bite, you get a different flavor, whether coconut, chocolate or yummy peanut butter.

I’ve also been searching high and low for a recipe, or at least one similar, ever since I saw you on Cheap Eats some time ago. I’m in Tennessee; any chance of a recipe in a vegan cookbook to come? None of the recipes I’ve found sound half as delightful and hearty as yours!
