Yield: 4-6 servings I first posted this recipe in 2010 and it remains a favorite. Bursting with summer, this recipe offers a delightful combination of berries, apples, basil, and balsamic vinegar. The basil and vinegar are unexpected in a fruit crumble – and so delicious. Enjoy it with whipped cream, ice cream, or straight up! […]

Gluten-free Recipe: Coconut Lime Muffins
This recipe can be made as a quick bread or as muffins. If you want freshly baked muffins in the morning, make the batter the night before and leave it in the fridge over night. Simply portion them out and bake them in the morning. I think orange zest would be just as good as lime zest in this recipe – I’m trying that next time for sure!
Seasonal Fruit Tartlets with Crumble Topping
Yield: 4 small tartlets or 1 9-inch tart I’ve always used my Mom’s recipe for pie crust. It’s a simple, straight forward, butter-based crust. No chilling required. Nothing fancy. Maybe that’s why it works. Every. Single. Time. I use mini tart pans with removable bottoms or 1 9-inch tart pan with a removable bottom. Left over dough may […]
Olive Oil Cake
Yield: 1 9×13 cake, 1 bundt cake, or several small cakes One night at book club, our hostess (thanks, Kirsten!) served this cake and I about fell out of my chair. I’ve also made it with almond oil instead of olive oil – equally delightful! Ingredients: 2 cups all purpose flour 2 cups sugar 1/2 […]
Marathon Update + White Bean Chili + Maple Corn Bread
On November 1st, I joined over 39,000 runners to compete in the NYC Marathon. The crowd support was amazing, the volunteers were incredible, and the weather was perfect – 50 degrees with a cloud cover. As a runner, you can’t ask for better conditions. My nutrition plan worked well – oatmeal, a sports bar, Gu and Gatorade […]
Apple Oven Cake
Yield: 6 servings This tasty little “oven cake” is a lot like an apple dutch pancake – more “egg-y” than “cake-y.” It comes together quickly and makes for a delightful breakfast (or dessert!) served with a dollop of fat free Greek yogurt. Ingredients: 3 tablespoons butter 1/4 cup maple syrup 1/8 tsp cinnamon 1 sweet apple, such as Fuji, peeled, cored and […]
Apple Spice Muffins
Yield: 12 muffins One way to lighten up muffins is to use pureed fruits (apples, prunes) and vegetables (squash) to make them sweet, moist and tender. These muffins from Golden Door use applesauce as a replacement for oil. With this delicious start to your day, you won’t miss the fat and calories! Ingredients: 1 ½ cups […]
Caroline’s Fruit Crisp
Yield: 1 9-inch fruit crisp My friend Caroline gave me this recipe many, many moons ago. I have used it with a variety of fruit including peaches, apples, and a combo of nectarines and blueberries. Served with a scoop of vanilla ice cream, this is one of my all time favorite desserts. The original recipe calls […]
